How to get your customers to get you more customers.
Revenue in your restaurant can be written as a formula:
Rev = Customers x Avg Total Visits x Avg Booking Size x A$pp

Given revenue is a product of 4 numbers, it makes sense to build a plan around increasing each of those 4 numbers. And while winning more new customers, driving loyalty and increasing spend per person are obvious, how can you increase average booking size?
Functions & Events
1 person makes the booking but they might book for 20, 50, 100 other guests. This is the easiest way to increase average booking size.
Groups & Birthdays
Corporate lunches, private dining, birthday groups. 1 person makes the booking but they might book for 6, 12, 20 other guests.
Promotions & Incentives
This is where you create a minimum booking size rule for an incentive or promotion. For example, book a party of 8 or more guests, and receive a complimentary round of cocktails on arrival.
How effective is Avg Booking Size at growing revenue?
Example:
Where average booking size is 2.6
Customers = 15000
Average Total Visits = 1.5
Average Booking Size = 2.6
Average $pp = $65pp
Total revenue = 15000 x 1.5 x 2.6 x $65 = $3.8M
Where average booking size is 3.1
Customers = 15000
Average Total Visits = 1.5
Average Booking Size = 3.1
Average $pp = $65pp
Total revenue = 15000 x 1.5 x 3.1 x $65 = $4.5M
Average Booking Size is the most overlooked opportunity for increasing revenue.
